Zucchini Banana Bread

Zucchini always give a nice moist bread and is always an nice treat. 
When trying to eat healthy, it's sometimes hard to resist, and that's ok with this bread. There's no guilt in having a slice here. 

WHAT YOU NEED:
  • ​1 medium zucchini, grated (not the giant ones from your neighbours in late summer) 
  • 1 medium banana (or 2 frozen bananas - am I the only one who freezes over ripe bananas?) 
  • 1/4  cup (60g) maple syrup
  • ¼ cup (60ml) extra virgin olive oil
  • 1 tsp. vanilla extract
  • 2 eggs
  • 2 cups (200g) oat flour (or any kind of flour you want. Oat, coconut or other gluten free flours are ideal)
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
WHAT YOU NEED TO DO:
​Preheat the oven to 350°F (180°C). Line a 9x5-inch loaf pan with parchment paper.
 
In a large bowl, stir together zucchini, banana, sugar, oil, vanilla, and egg. In a medium bowl, whisk together flour, cinnamon, baking soda, and salt. Add the flour mixture to the zucchini mixture, and stir well to combine.
 
Spoon batter into prepared pan. Bake for 55-60 minutes until an inserted wooden spoon comes out clean. Cool in the tin for 10 minutes, then remove from the pan and cool on a wire rack. 

TIP: Add 1/2cup chopped dates, raisons, currents or other dried fruit. 
Find the bread too dry, try using 2 frozen bananas instead of the 1 medium banana. When you do this you can also decrease the sugar amount
